We are excited to be in true summer now that the Solstice has passed and the days are long and warm. This simple salad is a weekly dinner choice in our household and we often add different toppings and vegetables, depending on what we are in the mood for or what’s fresh and available. It’s kid-friendly, but it‘s also great for adults who want an easy dinner (add hot chili sauce or oil for a kick!), and healthy!

Sesame Noodles
Cooked noodles of your choice (rice noodles are great, so are regular wheat pasta!)
Shredded carrots
Sliced cucumbers
Sliced snap peas
Cubed baked or raw tofu, or cooked meat
Chopped cilantro and/or mint to garnish
Lime wedge to garnish
Toasted sesame seeds for garnish
Dressing:
1/2 cup soy sauce (or alternative)
1/4 cup toasted sesame oil
2 teaspoons grated fresh ginger
2 Tablespoons rice wine vinegar
adding a bit of chopped garlic is also great
add peanut butter and a bit of hot water to make a peanut sauce version
Mix the dressing ingredients in a small bowl and set aside.
Combine the noodles and veggies and tofu, toss the dressing in, and then garnish with cilantro and lime wedges! This is great right away, or eaten as lunch the next day.
