Warm Cookies for Comfort


This week, I was a bit distracted by other things to be too inspired, so I turned to the younger residents of my home and asked what they’d love to make this Saturday on our Facebook Live class (10am PST) on the Tiny Onion Cooking School FB page. They didn’t hesitate for a beat! “Banana Chocolate Chip Cookies with Coconut!!”

Well okay, I’m in! Seems a good time to make some comfort food, and cookies sure fit that profile.

Below is the recipe to make alongside us if you‘d like to join live, or bake with us later with the recorded class.


Banana Coconut Chocolate Chip Cookies

2 cups flour

1 teaspoon baking soda

1 Tablespoon corn starch

1 teaspoon salt


1/2 cup unsalted butter, softened (or alternative)

2 ripe bananas

1 cup brown sugar

1/4 cup granulated sugar

2 teaspoons vanilla extract

1 cup chocolate chip

1/2 cup shredded coconut


Set oven to 375 degrees and lime a baking sheet with parchment or grease.

Mix the dry ingredients in a bowl and set aside.

Cream the butter (or alternative) with the sugars, vanilla and banana. Add the dry ingredients to the banana mix and combine until smooth. Add the chocolate chips and coconut.


Drop cookies in the size you prefer onto the baking sheet and bake until they are just about golden on the edges. About 9-10 min.

Remove and let cool on the baking sheet. Serve warm!
